Once you have done that, then you can apply that enchantment to any eligible item. Dragon's are automatically soul trapped. Technically if it's resisting it then it is immune. It wouldn't make any sense to be able to soul trap a dragon, their soul would be too big for any soul gem (Save MAYBE Azura's Star), them being lesser gods and all.
