I have read up on oil types recently and my recollection is that full synthetic oil is the way to go, at least for many engine types. The 2019 Edge manual says "synthetic blend" and I guess that's what Ford dealers should be using. But I'm not convinced that they would actually put in full synthetic if you asked, and paid extra, for it.
