Go with a Survival Bow or Rifle and try to land shots to its body or neck. Moose, unlike every other animal in the game that can survive a bullet or arrow, do not bleed out. I did the same thing with the stump in Coastal HIghway. Now you mention it, that's exactly what happened with my cache at Three Strikes. The icon appeared upon mapping, rather then upon finding the note.
