I will mainly be cooking for 2-4 people, very occasionally more like 6-8. I like to smoke ribs, pork butt, brisket and chicken, but would like to branch out to other foods, desserts, cheeses, etc.

The one thing I could see and be most concerned about failing is your power. A storm comes through, someone gets in an accident and hits an electric pole, breaker blows, and now you're without power. Losing power would most likely be the cause of the grill not working than any one single part on the Rec Tec pellet grill itself.

I cook tri tip all the time on my bullseye. I smoke it on low until it hits about 110 F, remove the meat. Turn the bullseye to 500F, put the meat back on and sear it. There is hardly any fat on a tri-tip if it's trimmed properly. The entire process takes less than an hour. And I never use a drip pan.

Over the lifetime of the grill, the extra $300 you might spend for the 700 isn't that much of a deal compared to the total cost, assuming you can afford it now.The Rec Tec support rep said they suggest not sealing the lids. The reasoning being that the lids where actually designed to breath a bit.
